I had planned to share this recipe with you the first week of the year.

In fact, I had a whole lineup of recipes to share as we dive into 2018.

But then a number of things happened in my personal life that made it so I wasn't able to prioritize the blog.

And then I came down with the flu.

More specifically, I came down with Influenza A, the kind of flu that lands in you bed, unable to move or do much of anything.

I actually ended up in the hospital as a result, and it's taken quite a few days to feel up to cooking.

But now, finally, finally, I'm back and ready to get back to business!

This was the very first recipe I wanted to share, as it's the perfect nourishing, healing type of meal one wants after being sick.

It's also dead simple to make, and was a hit with the whole family.

It happens to be grain-free, paleo and Whole30 compliant, too, so it's perfect if you're following one of those diets.

This recipe is also the first (of many) made in an Instant Pot!

An Instant Pot is an electric pressure cooker, and makes whipping this soup up possible in a matter of minutes.

If you don't have one, though, not to worry. I also included instructions for a slow cooker as well.

And, if you're looking for a stovetop adaptation, check out this recipe!

I hope you enjoy this recipe in good health.

Now, let's make some Instant Pot + Slow Cooker Turmeric Chicken No-Noodle Soup!

RECIPE & KID-FRIENDLY ADAPTATIONS

1 | Use boneless, skinless chicken breasts or thighs--whichever you prefer is fine.

2 | Add 2-3 handfuls of spinach to the cooked soup for a boost of greens.

3 | Turmeric stains, so be aware when feeding little ones who might spill.

1 cup chopped yellow onion

1 tablespoon turmeric

¼ teaspoon ground pepper

2 teaspoons kosher salt, divided

2 pounds boneless skinless chicken breasts or thighs

1 quart chicken stock

1 cup water

Instant Pot Instructions

1. Add the olive oil to an electric pressure cooker. Turn to saute, add the onion and ¼ teaspoon salt and saute for 4 minutes.

2. Add the carrots, celery, ¼ teaspoon salt, turmeric and pepper, stirring to combine.

3. Salt the chicken on both sides using ¼ teaspoon salt. Add the chicken in a single layer on top of the vegetables.

5. Secure the lid, select the manual setting, and set it to high pressure for 15 minutes.

6. When the pressure cooker timer is done, quick release the pressure.

7. Remove the chicken,  and shred or chop into bite sized pieces. Add back to the pressure cooker, stirring to combine. Taste, adding additional salt or pepper if desired.

3. Add the vegetable mixture to a 6-quart slow cooker.

4. Salt the chicken on both sides using ¼ teaspoon salt. Add the chicken in a single layer on top of the vegetables.

4. Pour in the chicken stock, water, and remaining 1 ½ teaspoon salt.

5. Cover and cook on high for 4 hours, or low for 6, or until the chicken is cooked through and the vegetables are tender.
