At first it just seems so daunting, right?
Well, if you happen to fall squarely in the pressure cooker first-timers club, this recipe is the perfect one to bust it out of the box and get to cooking.
And, if you’re an old pro with the pressure cooker, but haven’t put it to use making hard boiled eggs, then let me introduce you to your new favorite recipe.
I’ll admit I was skeptical when I heard how awesome the pressure cooker is at making hard boiled eggs.
I mean, why lug out an appliance when I can just make them on the stove top?
After giving it a try, though, I am an absolute convert.
The magic is in how easy the shells peel off.
Even stubborn farm fresh egg shells slide right off.
As in, literally slide right off, without taking half of the white with them.
The other benefit is the timing control, resulting in perfectly cooked bright yellow yolks every time.
My method is simple: set the pressure timer for 1 minute, then quick release the pressure and plunge the eggs into an ice bath to stop the cooking.
Of course, it takes the pressure cooker several minutes to come to pressure, so the total cook time is more than one minute.
But all in all, it’s still super fast, and can be done in the background while you’re cooking or taking care of other chores.
It’s the perfect no brainer meal prep, even if you don’t have time for anything more involved.

One-Minute Instant Pot Hard Boiled Eggs
12 pastured eggs
1 cup water
2. Secure the lid, select the manual setting, and set it to high pressure for 1 minute.
3. When the pressure cooker timer is done, quick release the pressure.
4. Add the eggs to a medium bowl filled with ice and cold water. Allow to sit until cooled, about 5 minutes.
5. Peel and use immediately or store in the fridge for up to 5 days.
Notes: For a similar result on the stove top, add the eggs to a medium saucepan. Cover, heat to high until just boiled. As soon as the water boils, turn off the heat. Allow to sit, covered, for 10 minutes. Proceed with steps 4 and 5.
