Sunday Meal Prep. I love spending a pocket of time on the weekend to get ready for the week by meal prepping. This week the lineup included rainbow veggie egg cups, apple cornmeal muffins, roasted sweet potatoes & beets, pumpkin hummus (that recipe's coming next week!), hard boiled eggs, and garlic rosemary chicken.
Breakfast at the Lake. We traveled to Upstate New York for the Labor Day weekend to visit Andrew's family and spent as much time in the lake as possible. We soaked up as much sun as we could before summer comes to and end.
Snacking with the Cousins. Elle had a blast playing with her older cousins and only slowed down long enough to refuel with a quick snack. Veggies and cashews for the win!
Farm Standing. One of our favorite parts of visiting Upstate New York is the beautiful farm land and amazing roadside farm stands. We stopped at this one to stock up on spaghetti squash to go with Andrew's mom's Sausage and Peppers.
Plank on the Lake. Stand Up Paddle Boarding on the lake was my favorite part of the trip, and I was able to practice a little barre3 on this calm day. I should post all the "outtakes" from trying to balance on the board. Let's just say I ended up in the water more than once.
Back to School. Elle (finally) starts full-time preschool this week. We celebrated our last day before she started with a streetcar ride, a green juice, and a leaf hunt. She's been in a combination of daycare, preschool, and with a nanny on and off since she was born, but this week we're going full time. It's bittersweet; I'm happy to send her off to make friends and learn the world, and I'm so looking forward to getting back to focused uninterrupted work, but I'm going to miss my little buddy. She told me tonight that we'll be best friends forever. I really, really hope so.
