I'm back this week with a Thursday Things to recap the past few weeks in photos and recipes. Cheers!
Healthy Travel Snacks. We've been doing all kinds of road trips this summer and I always pack lunches so we don't have to eat fast food. I like to pack a combo of fruit, veggies, protein (in this case sugar- and preservative-free turkey), healthy fats like guacamole, and something to dip like sweet potato crackers and pretzels for my daughter. Throw in some sparkling water and we're good to go! I used these bento boxes, these rectangular cups, and these round cups to pack our lunches.
A Day at the Beach. The Oregon coast on a sunny day. My happy place.
Swiss Chard Two Ways. Saute thinly sliced garlic in olive oil, add chopped chard leaves, sprinkle with sea salt, cook until wilted, then squeeze with half a lemon and serve warm. Meanwhile, chop the stems and marinate in lemon juice, salt, and honey. Serve altogether or separately.
A Healthy Little Breakfast. Roast chopped potatoes drizzled with olive oil in a 400 degree oven for about 20-30 minutes or until crispy. Top with fresh rosemary, a fried egg, an avocado, and chopped fresh rosemary.
And in case you missed it, here are new Real Food Whole Life recipes and posts from the past few weeks . . .
