Easy Summer Lunch. I've been trying to eat more fish lately and it doesn't get much easier than canned salmon. For this simple summer lunch combine 1 can drained salmon, olive oil, lemon juice, salt, pepper, finely chopped sweet onion, and basil. Serve with veggies and sliced avocado.
My Favorite Sous Chef. Cooking with Elle is one of my favorite activities. It keeps her busy and she's much more likely to try something new if she's had a hand in making it. Power Breakfast. I hosted (and catered!) my best friend's baby shower last weekend, which required a serious power breakfast pre-party. I went with an olive oil fried egg over gluten-free toast, sliced bell peppers, and half an avocado. I got her the cutest bib and burp set from Minky & Prickett, my baby shower gift go-to. I die over how cute her stuff is!
Smoothie Set Up. I make my smoothie routine run smoothy (sorry, I had to!) by organizing and storing all the ingredients in mason jars on one shelf in the fridge. Having everything in one place make for faster prep and less mess in the mornings.
Summers are for Grilling. Sliced zucchini and sweet onion with lemon, thyme, and olive oil on the grill makes for a perfect side. Add to that a salad of tomato, cucumber, garlic, parsley, red wine vinegar and olive oil and you're all set. Yum!
Healthy Weekly Meal Plan. Zucchini and Beef Ragout was the most popular in this plan. I love hearing how your kids are digging this one, and eating their veggies, too!
Maple Oat Mixed Berry Crisp. A gorgeous, easy berry-filled dessert. I definitely think you should whip this one up this weekend!
