Did you guys know I have a full-time job on top of running the blog?
Add those two responsibilities to my wonderfully full family life, and I don't actually have a lot of time to cook dinner.
Funny to admit as a food blogger, I know.
My lack of time to cook, combined with my desire to eat real food, was one of the primary reasons I started Real Food Whole Life.
I believed then, as I do now, that it is possible to eat and live well in a busy, full life.
We just need a little help and plenty of short-cuts to get there.
This belief also motivated me to create Real Food Fix, a start-to-finish meal prep and planning system that takes the time and effort out of real food.
The Real Food Fix concept is simple: prepare the essential parts of recipes ahead (sauces, protein, cooked veggies, etc.) and combine them into different meal types (bowls, salads, tacos, pasta, stir-fries, etc.) during the week.
I've found that thinking about real food in this way takes the effort out of planning and prepping, and allows you to use what you have on hand and to grocery shop with ease.
Real Food Fix has been an essential part of my real food journey.
I'm thrilled to be able to share the system with you!
To celebrate the release of Real Food Fix, today I'm sharing two recipes with you. The first, a basic pulled chicken in the slow cooker, and the second, a fantastically easy and tasty Lemon Herb Sauce.
And, as I do in Real Food Fix, I'm showing you how to take these two basic recipes and create 3 different meals.
If you want to get a jump on these meals, simply prep the sauce ahead. You'll be amazed that spending just a few minutes in the kitchen ahead makes throwing dinner together during the week so much simpler.
I hope you enjoy this sneak peek Real Food Fix recipe. Now, let's make some Slow Cooker Lemon Herb Pulled Chicken!

Slow Cooker Lemon Herb Pulled Chicken*
For the Lemon Herb Sauce
2-4 medium garlic cloves, minced or finely grated
⅓ cup fresh lemon juice
1 teaspoon dijon mustard
½ teaspoon kosher salt
⅓ cup olive oil
1 teaspoon dried Italian seasoning
For the Chicken
2 pounds boneless, skinless chicken breasts or thighs
Lemon Herb Sauce
1. Make the sauce: In a medium bowl or jar, whisk or shake together the garlic, lemon juice, mustard and salt. Stream in the olive oil, whisking until smooth. Add the Italian seasoning and stir to combine.
Alternatively, add the garlic (no need to chop first), lemon juice, mustard and salt to a blender. Blend on high, then stream in the olive oil and blend until smooth. Add the herbs and pulse to combine. Use immediately or cover and chill for 3-5 days.
2. Add the chicken along with ½ cup Lemon Herb Sauce to a 6-quart slow cooker.
3. Cover and cook on high for 3-4 hours or low for 4-5 hours, or until the chicken shreds easily with a fork.
4. Remove the chicken, shred with two forks, then add it back to the slow cooker, stirring to combine. Stir in the remaining Lemon Herb Sauce, or reserve the Sauce and serve it on the side.
5. Serve the chicken as is, or use it in bowls, pasta, tacos, salads, stir-fries or mason jar salads.
Makes 4-6 servings.
