They're perfect if you're looking to get quick, healthy dinners on the table or if you're trying to eliminate gluten and dairy from your diet. All the recipes can be made in 30-minutes or less, with 10-ingredients or fewer, in one-pan, or in a slow cooker. Now let's get meal planning!

1 | Slow Cooker Refried Bean Tacos (v, vg, gf, df)
You will not believe how absolutely simple and easy this recipe is! Once you try it I suspect you'll add this one into your weekly rotation. It's just such a no-brainer! Use any toppings you like. Tons of veggies are a must, but from there feel free to get creative. You can also cook up some ground beef or turkey to add to the tacos is you like.
2 | 15-Minute Turkey Cranberry Lettuce Wraps (gf, df, p)
Another spectacularly easy recipe that I think you're going to love. I used fancy raddicchio for this photo, but romaine leaves, iceburg, or butter lettuce will work just as well. You can also serve the filling wrapped in a warm tortilla or in rice bowls. Yum!
3 | Grilled Hummus, Apple and Caramelized Onion Sandwich (v, vg, gf, df)
Did you know grilling hummus in a sandwich makes it melty and gooey, a lot like a grilled cheese? If you don't have homemade hummus on hand, feel free to use a good-quality store bought option. And, if you make the onions ahead of time this meal will come together in about 10 minutes. Use gluten-free bread to make this recipe gluten-free. And if you're not dairy-free, I've heard this sandwich is pretty amazing with some cheese adding during the grilling process.
4 | Moroccan Chicken Bowls (gf, df, p)
Elle went wild for the cinnamon-scented chicken in the recipe the first time I made this recipe, it's flavorful without being spicy. Zucchini is a great veggie option here, but any grilled or sauted veggie will work well. Since it's not really nectarine season at the moment, feel free to substitute defrosted frozen peach slices instead.
5 | Hearty Winter Pasta (gf, df)
This simple, hearty pasta is a great way to get your family to eat their greens! I use delicata squash, since it doesn't require peeling and cooks quickly. If you can't find delicata in a store near you, butternut will make a good substitute. Use gluten-free pasta or whole wheat, depending on your and your family's dietary needs.
Bonus Breakfast: Double Chocolate Almond Joy Granola
This seemingly decadent granola contains only real food ingredients and natural sweeteners, making it the perfect make-ahead breakfast. The healthy fats from the almonds and coconut, along with the fiber and protein from the oats, will keep you going all morning. Make a double batch during the weekend and breakfast will be done for the week.
