Slow Cooker Chicken, Black Bean and Quinoa Stew (gf, df, ff)
This recipe has been wildly popular so far, and for good reason. It's super simple to prepare and the results are so tasty! Be sure to load up on toppings like avocado, chopped scallion, cilantro, and fresh lime juice for maximum flavor. Add crushed tortilla chips to make this Mexican tortilla-style.
One-Pan Chicken Bruschetta Zoodles (gf, df, p)
The fresh, bright flavors of this simple dish will make you feel like it's summer, even if it's still the middle of winter where you are. Zoodles (zucchini noodles) make a light, paleo-friendly base, but feel free to substitute whole wheat or gluten-free pasta. I often make both pasta and zoodles, and let each family member individualize their own dinner.
20-Minute Black Bean Bowls with Confetti Slaw (v, gf, df)
These bean bowls are so easy to make, and pack a ton of veggies into one meal. They are perfectly satisfying as is, or serve with warm tortillas for wrapping. Simply grilled shrimp, chicken or fish make a nice addition to these bowls, too.
Maui Turkey Tacos (gf, df, p)
You guys, I love these tacos so much. The simple addition of canned pineapple adds so much flavor to the turkey, and the addition of grilled veggies send these over the top. Add a quick cabbage slaw or cooked quinoa on the side if you like.
While your at the store buying pineapple for the tacos, grab an extra can for these flavorful bowls. Then add some ground beef (chicken or turkey also works), a few staples from the produce aisle and you'll be set to whip these up in no time. I could eat this every night!
