A wholesome, easy, tasty treat, One-Bowl Lunch Box Energy Bites (Nut-Free) are perfect for lunch boxes, as an afternoon snack, or as a quite bite on-the-go.
So many of you have asked me to share more lunch and snack ideas, and over the past few months I've been working hard on developing and testing some new options for you.
After all the testing, I'm excited to start sharing more quick, easy, tasty, and nourishing lunch box options!
To kick things off, today I'm sharing the recipe for these nut-free energy bites. They are the perfect little bite-sized treat, packed with wholesome ingredients, and super simple to make.
Since Elle is attending a variety of summer camps over the next few months, I've been stretching myself to come up with more options that pack well, keep her full, and that are safe to send.
These wonderful little bites fit the bill on all counts and have passed the kid taste test with flying colors. Elle gobbled them up during the testing process, and my niece and nephew also gave them a thumbs up during their recent visit from New York.
I have to admit, too, that I like these just as much if not more than my girl, so I've been making a double batch and hiding some in the back of the fridge just for me. Please don't judge me.
They are just the thing for a little afternoon pick-me-up or an after-dinner treat. Just be sure to keep them cool, they can get kind of sticky if they get to warm.

RECIPE & KID-FRIENDLY ADAPTATIONS
1 | Skip the chocolate chips if you want to keep this recipe completely refined sugar-free.
2 | Invite your child to help make these energy bites. He or she can stir all the ingredients together, scoop the dough, and roll each bite into balls.
THIS RECIPE IS . . .
Naturally Gluten-Free, Dairy-Free, Nut-Free, Egg-Free, Naturally Sweetened, Vegetarian
One-Bowl Lunchbox Energy Bites (Nut-Free)
1 ½ cup whole, rolled oats (not instant)*
½ cup unsweetened, flaked coconut
½ cup ground flax seed
⅛ teaspoon sea salt or kosher salt
½ cup sunflower butter, warmed to soften
¼ cup melted coconut oil
¼ cup honey
1 teaspoon vanilla extract
¼ cup mini chocolate chips (optional)**
1. In a large bowl, mix together the oats, coconut, flax seed, and salt.
2. Add the sunflower butter, coconut oil, honey, and vanilla extract, stirring until well combined.
3. Add the chocolate chips, if using, stirring until well incorporated.
4. Scoop 2 teaspoons of the dough, then roll into a ball. Place the ball on onto a sheet pan lined with parchment or a silicone mat. Repeat with the remaining dough.
5. Refrigerate for at least 30 minutes. Store, tightly covered, in the refrigerator up to 5 days.
Makes about 30 energy bites.
*Use gluten-free oats if if you’d like this recipe to be gluten-free.
