A fun, fresh twist on nachos, these Loaded Sweet Potato Fries are filling, healthy and delicious! Plus they're naturally dairy-free and gluten-free so you can enjoy them any night of the week.
I have to be honest with you. I love nachos. Crispy corn chips, gooey cheese, sour cream and all the fixings. Yeah. Major guilty pleasure. As much as I love nachos, though, I know they're not the best choice for an everyday meal. These days I save the nachos for a special splurge, so I needed to come up with a healthier choice. In my search for a nacho alternative I've come up with these loaded sweet potato fries, and let me tell you, they may be even better than nachos!
A glorious plate of homemade sweet crispy fries, piled high with ground turkey, tons of fixings, and creamy, tangy guacamole. This is the kind of meal that will fill you up without weighing you down. Be warned, these fries are so substantial you may need a knife and fork. Whether it's for game day, a get together with friends, or just a night at home I think you're going to love these loaded sweet potato fries!
Sweet potato fries are easy to make at home. Simply slice sweet potatoes, drizzle with olive oil, sprinkle with salt, and roast in a very hot oven. While the sweet potatoes roast, whip up the rest of the toppings and make the guac. By the time the fries are done the entire dinner will be ready to go. Feel free to add cheese if you like, but it's really not necessary. These loaded fries are amazing as is! As written this recipe is naturally gluten-free, dairy-free, paleo and Whole30 friendly.
Kid-friendly notes. This is a very kid-friendly meal, but here are some options for resistant eaters:
- Serve all the parts separately on his or her plate. Think fries, some cooked turkey, sliced potatoes, and guac.
- If he needs something to dip the fries in guacamole is a great option. If all else fails organic catsup or sour cream might make dipping more enticing.
Now, on to the recipe!
Loaded Sweet Potato Fries
1 pound sweet potatoes, scrubbed clean with skins on
2 tablespoons olive oil, divided
1 medium yellow onion, chopped
1 teaspoon salt, divided
1 pound ground dark meat turkey (light meat will also work)
½ teaspoon cumin
½ teaspoon garlic powder
½ teaspoon mild chili powder
1 head romaine lettuce, washing and chopped
1 medium tomato, chopped
2 scallions (white and green parts), chopped
Easiest Guacamole or 2 medium ripe avocados, sliced
1. Preheat the oven to 400 degrees Fahrenheit.
2. Cut the sweet potatoes into matchsticks, being careful to cut into evenly sized pieces. The thinner you slice the potatoes the faster they will cook.
3. Place the potatoes on a baking sheet lined with parchment paper or foil. Drizzle with 1 tablespoon olive oil and ½ teaspoon salt, tossing to coat. Be careful not to overcrowd the pan. If the potatoes are overlapping use a second pan.
4. Bake the sweet potatoes for 20-30 minutes, flipping halfway through. Remove from the oven when the potatoes are lightly browned and tender all the way through. They may not be super crispy, but as long as they're tender and browned they'll be perfect in this recipe.
5. While the potatoes cook, heat a medium skillet over medium heat. Add 1 tablespoon olive oil, the onion, and ¼ teaspoon salt. Saute for 5-7 minutes, stirring occasionally, until the onions are soft.
6. Turn the heat to medium high, add the turkey, ¼ teaspoon salt, cumin, garlic powder, and chili powder. Saute for 5 minutes, stirring occasionally, until turkey is browned and cooked through.
7. To serve, place sweet potatoes on a plate. Top with lettuce, the cooked turkey mixture, tomato, guacamole or avocado, and scallions.
