So I just did a quick calendar check and apparently there are only two Friday's left after today in the entire year. Is that crazy? That means two more Healthy Weekly Meal Plans and then we close the books on this year and look ahead to 2016.

I know this time of year can be beyond hectic, and that dinner at home can often be challenging. I hope this meal plan can provide just a little guidance and grounding, and that you're inspired to cook a few real-food recipes at home this week. 

The Slow Cooker Enchilada Chicken is one of my all-time favorite easy recipes, so if you only cook one thing, I'd say go for that one. The Winter Pasta is one of our recent family favorites, too, and the Gingerbread Pancakes are a standard breakfast classic that make a lovely "breakfast for dinner" option that everyone will love. Slow Cooker Enchilada Chicken

This super-fast, minimal-ingredient, throw-everything-in-and-walk-away recipe is a staple in our house this time of year. Serve in lettuce cups with sliced avocado for a light supper, or in quinoa bowls with guacamole and a a little sprinkling of cheese for a hearty winter meal.

Winter Pasta with Chicken Sausage and Kale

Can I convince you that pasta with kale and squash is delicious? I hope so, because let me tell you, this pasta is awesome. Add a little chicken sausage for protein, or swap in a can of rinsed, drained white beans for a vegetarian option. With just a handful of ingredients this one is easy and sure to please!

3 | Pumpkin Avocado Tostadas from Love & Lemons (vg, v, gf, df)

These tostadas may sound a little strange but they are crazy delicious. They come together easily, too, if you use canned pumpkin. Skip the chili and chipotle powder if you prefer to keep things mild.

Gingerbread Pancakes

Who says we can't have pancakes for dinner? These holiday-inspired pancakes are so easy to make and require just one-bowl. Make a double batch to enjoy during the week or to freeze for later. Serve sliced oranges or pomegranate seeds alongside to round out the meal.

5 | Beef Taco Bowls from Iowa Girl Eats (gf, df, p)

These Taco Bowls can truly be made in 20 minutes, making them the perfect weeknight go-to. Add a can of rinsed, drained black beans to bump up the fiber.
