Angel's Rest. Last weekend we took a family hike to Angel's Rest in the Columbia Gorge. The day was beautifully warm and the views spectacular. Elle is admittedly getting too tall and heavy for our child carrier, but we're not ready to give up hiking until she's old enough to do an entire hike herself. If anyone has big-kid carrier suggestions for bigger kids I'd love to hear them!
Spring Green Pesto Happenings. Putting the homegrown spinach and basil to good use in the season's first pesto. I had it over zoodles and the rest of the fam had it over whole wheat pasta or a combo of the two. This dairy-free version turned out so well I'll play around with it a bit more and then post it on the blog.
Summer for the Weekend. Hanging out in backyard with a wide brimmed hat and a pink ruffled swimsuit. Life doesn't get much better.
Spring Greens. Baby spinach making an appearance in our backyard garden beds.
First Backyard Dinner of the Year. Asparagus + farmers market sasauge from the grill, spinach salad with lemony-honey vinaigrette, kraut, mustard, & melon.
Spring Pesto Makings. My end-of-the-week strategy for salad making: take all the veggies out of the fridge. Chop everything up. Add some crunchy toppings. Top with a fried egg and lots of hot sauce. This salad was a satisfying combo of Bibb lettuce, red cabbage, radishes, carrots, kraut, sunflower seeds, an olive oil fried egg, white wine vinegar, olive oil, and hot sauce.

About Real Food Whole Life. I updated the "About" page for the blog this week and added a little more on why I started Real Food Whole Life in the first place. Behind the scenes fact: this is not my kitchen, it's my parents. Mine's not nearly as bright as theirs so I "borrowed" it for this photo shoot. Thanks mom and dad!
Slow Cooker Enchilada Chicken. I'm so happy you guys are loving this simple recipe. I'm thinking of using the leftovers to make actual enchiladas one of these days. Stay tuned!
