A recap of the past two weeks in photos and recipes. Catch up on what you've missed and discover new recipes, tips, and inspiration. This week I'm sharing healthy travel snacks, freezable pesto inspiration, a Super Healthy Kids guest post and more. Cheers!
Healthy Travel Snacks. We flew to Upstate NY this week to visit Andrew's family, which takes us all day (usually about 12 hours door to door). I've learned the hard way it's best to bring my own snacks and meals, especially when traveling with a 3 yo. Here's what I packed for snacks: fruit (mango and pineapple because they were on sale and also yum!), veggies (bell pepper, carrots, cucumber), gf pretzel sticks, plantain chips, macadamia nuts, hard boiled eggs, and a frozen pea "ice pack" to keep everything cold (regular ice packs usually don't make it through security).
Fall is in the Air. Fall, I see you coming! I love the change of season but I am going to miss my post-dinner-bath-books-bedtime walking routine so darn much when the evening light starts to fade. It's usually the only way I'm hitting my 10,000 steps per day goal, plus the only time to be alone and binge listen to podcasts. Maybe I should get a reflective vest and just walk in the dark rain this winter. Bad idea?
Rainbow Veggies. Playing with our food is the only way to go following a recipe shoot.
Nut-Free, Dairy-Free Pesto for the Freezer. Weekend garden project success: 20 jars of nut-free, dairy-free pesto ready to go in the freezer. 💚 Andrew and Elle harvested all our garden basil and made a whole lot of pesto last weekend to freeze for months to come. It's great spooned over eggs, on pasta or zoodles, and as a quick marinade for grilled chicken or fish. It's going in the freezer right next to 5 1-gallon bags of frozen blackberries. Love having a little bit of summer tucked away for later.
Pretty Little Lunch. A little late summer inspired lunch. Slow cooker pumpkin soup (recipe test leftovers) + roasted beets with parsley, EVOO, and balsamic.
5 Quick & Easy Kid-Friendly Pasta Salads. I was invited to be a contributor over on Super Healthy Kids and posted my first recipe, 5 Quick and Easy Pasta Salads, this month.
And in case you missed it, catch up on Real Food Whole Life recipes and post from the past two weeks . . .
Healthy Blackberry Breakfast Cookies. I've loved hearing how much you (and your littles) are enjoying these breakfast cookies. I plan on making a triple batch before school starts to have on hand for quick breakfasts and lunches on the go.
Healthy Weekly Meal Plan. Slow Cooker Pulled BBQ Chicken was the most popular in this plan and would make a great addition to a Labor Day get together. Weeknight Zucchini & Beef Ragout was a close second and a great way to sneak extra veggies into a pasta dinner.
15-Minute Chicken Broccoli Stir Fry. You can't go wrong with this simple, tasty stir fry. Bookmark or pin this one for a night you needs something super fast and easy.
10 Reasons Tracking Your Workouts Matters. Tracking workouts is key to maintaining healthy workouts. We're breaking down the details in this debut guest post from Andrew.
Loaded Sweet Potato Fries. Have you tried this one yet? It is surprisingly easy and delicious, and as I've heard from many of you, a big hit with hungry husbands.
Favorite Healthy Cookbooks. I'm an admitted cookbook addict so wanted to share some of my top healthy favorites with you. Take a peek and then add a few to your cookbook wish list!
Make Ahead Rainbow Veggie Cups. These cups have been changing our breakfast game in the best possible way. Easy to prepare ahead of time, packed with protein & veggies, and portable, they're our new favorite way to start the day. Great packed for lunch, too.
Healthy Weekly Meal Plan. Slow Cooker Chicken, Veggie & Quinoa Stew was the favorite in this plan, followed by Simple Pesto.
