Nourishing Baby Brunch. Sunday was the baby shower. I took lots of pictures of the mama-to-be and also the food. Because the food was amazing. There was a big green salad with lots of spring veggies, three types of dressings, a huge fruit salad, a platter of various grilled veggies with vegan garlic aioli, a dijon chicken salad, a curried quinoa salad, and vegetarian samosas with chutney. Definitely the best baby shower brunch spread ever. I'm working on tracking down a few recipes to share with you here, so stay tuned!
Boulder Dinner. Walking along Pearl Street with friends we ended up at Zeal for dinner. We dined on sprouted rice, all kinds of roasted veggies and green juice. It was the full Boulder experience. Walking back to the hotel we spotted no less than three restaurants proudly displaying their own microgreen and sprout gardens. Ah, Boulder. #trendalet
Waiting for the Rain to Stop. Waiting in the parking lot for a spring downpour to letup. We eventually made a run for it and ended up soaking wet. Elle thought it was hysterical.
Springtime Green Smoothie. Baby spinach and mint made an appearance in our garden this week, inspiring a springtime green smoothie. Light refreshing, and not too sweet, it's a new favorite around here. For one serving, place the following into a high-speed blender: handful of baby spinach, leaves of a few springs of mint, juice of one lemon, 2 tablespoons full-fat coconut milk, 1 tablespoon hemp seeds, milk of choice (I used my super-fast vanilla cashew milk), and ice. Blend and enjoy. Add a pitted date if you prefer the smoothie a little sweeter.
